When juice starts to collect, it should be drained into a separate container to prevent it from mixing with the water. The time required to obtain juice, counted from the moment the water boils (steam appears in the upper vessel), is: - for soft fruits (strawberries, raspberries) 20 - 30 minutes; - for semi-hard fruits (black currants, blueberries) 30 - 40 minutes; - for hard fruits (apples, pears) 45 - 60 minutes; About 15 minutes after the water boils, open the clamp on the hose and drain the accumulating juice directly into bottles or jars. Immediately after filling, seal them with caps or twist-off lids. Filled juice bottles (jars) should then be placed in a pot of water and pasteurized for 30 minutes (counted from the moment the water boils).
